Peanut Butter Cup No-Bake Snack Bites

We live in the same town, but in different neighborhoods. Yet, they’re the exact same type of neighborhood – the fantastic, really friendly kind. You know, the kind where you can’t get any yard work done because people keep walking by and chatting, and suddenly your weeding project has turned into a backyard bonfire, or an ice cream party on the cul-de-sac. Yeah … we both have great neighbors (and happy, thriving weeds)!
Our neighborhoods are also filled with kids. They kinda run in packs. (No, not like wolves or hyenas! More like energetic, fast-moving, giggling, tag-playing, very hungry packs!)
And, they’re on to us. They know we’re always concocting new recipes and constantly looking for taste-testers.
Sure enough, the other day Shelley got a call from her neighbor, Marrie. (For those of you who are regular readers, you may remember that she’s the genius friend who spurred one of our most popular recipes ever, our Blueberry-White Chocolate Muffins.)
After chatting away, Marrie got to the point. Sooooooo … her daughter reported trying a new type of Snack Bite and REALLY liked it! Could she please have the recipe? Please???
Should have seen that coming, right?!?!
So, for all our little neighborhood foodie fans that are always lurking around and hoping for new “prototypes” – here’s the latest Snack Bite recipe. And, yes, Marrie – this is the one your daughter was raving about! They taste sorta like Reese’s Cups (yeah – yum!), but they have all the healthy protein and whole grains you’ve come to expect from our Snack Bites. And, they’re just as easy to make as all the rest. Plus, freezable and no baking required! (Yay!!!! … We can hear your cheers from here!)
Now, we have to fess up and tell you that we’ve been holding onto this recipe for months. Way back last winter we had a “snack-bite-inventing frenzy” because our families just couldn’t get enough! So why, you ask, are we unveiling it now? Because tomorrow is National Peanut Day, of course! (Check your calendars – we’re not kidding!)

Peanut Butter Cup No-Bake Snack Bites
If you love Reese's Peanut Butter Cups, you've gotta try these quick no-bake Snack Bites! They're easy, freezable and really nutritious!
• Ready in 30 Minutes or Less • Freezable • Make Ahead • Vegetarian •
Ingredients
- 1 cup quick oats
- 1/2 cup ground flaxseed meal
- 1/2 cup natural, creamy peanut butter
- 5 tablespoons honey
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla
- 1/4 cup mini chocolate chips
- 3 tablespoons crushed cashews
Instructions
- In a medium bowl, combine all ingredients except chocolate chips and cashews.
- Stir to combine.
- Add chocolate chips and cashews to mixture and stir again, just until combined.
- Using your hands, press firmly to form one-inch balls.
- Place in an air-tight container and refrigerate until serving.
Notes
Storage: If your peanut butter is one of the natural brands that needs to be refrigerated, then so do your Snack Bites. Actually, regardless of the peanut butter you use, these will keep much better in the refrigerator. They can even be frozen (so you may want to make a triple batch!). When frozen, these Snack Bites will be thawed in about 20 minutes.
