They actually take much longer to put together than you’d probably imagine, because we’re so picky in debating which recipes truly best meet our THK standards of being relatively healthy, easy and quick. But, we love researching and compiling them and have discovered so many wonderful recipes and fantastic blogs … then we just love being able to pass along all that inspiration to our readers!   1. It’s funny, years ago, my friend who’s married to a Syrian, made some freekah. The ME has been eating it for years and now it’s like whoa, the biggest deal! It cracks me up 🙂

You’re so right – in some parts of the world, like Middle Eastern countries and Australia, freekeh is much more just a typical part of their food culture, but here in America, lots of people are only now becoming aware of it and realizing how incredibly healthy and delicious it is. We’ve had some really great feedback from readers who’ve tried freekeh because of our recent posts about it – once people try it, they realize how great it is and are so enthusiastic about it! Just yesterday, I was chatting with my mom and she was absolutely raving about it and telling me how totally hooked she is now! 😀 ~Shelley
