Oh, the irony …
Being too sick for chicken soup. I mean, is that actually even a thing that can happen?
I guess it is.
I had entirely planned on sharing all these yummy, warm-you-up-like-a-hug Instant Pot chicken soup recipes with you last week. But then … the flu found us (*ugh*).
Amy brought it right on home from school with her, where the kids are all passing it around just as fast as teenagers can. And of course it was only a matter of time until the rest of us got in on the fun. Like dominos … we fell … (again I say: *ugh*).
So guess what I didn’t share with you last week? Yup. Chicken soup. I’m sorry.
But these recipes are worth the wait, for sure!
They’re 100% the kind of recipes you’ll want to have on hand when your own daughter brings fun viruses home from school. Although, they’re honestly great any time (sniffles or not!). Maybe nestled alongside a grilled cheese sandwich or some hearty, crusty whole-grain bread. I’m kind of daydreaming about it as I type this, actually.
Oh – and did I mention the Instant Pot part? (Yeah – you know I did!) That means these are also super-quick dinner options for busy evenings, or cozy, easy weekend recipes that’ll be ready to ladle up in a jiffy!
And, since you can generally swap turkey in for chicken and vice versa (hint: brilliant for using up your Thanksgiving bird), I found a few turkey soup recipes for you, too, while we’re at it!
