We live in the same town, but in different neighborhoods. Yet, they’re the exact same type of neighborhood – the fantastic, really friendly kind. You know, the kind where you can’t get any yard work done because people keep walking by and chatting, and suddenly your weeding project has turned into a backyard bonfire, or an ice cream party on the cul-de-sac. Yeah … we both have great neighbors (and happy, thriving weeds)!

Our neighborhoods are also filled with kids. They kinda run in packs. (No, not like wolves or hyenas! More like energetic, fast-moving, giggling, tag-playing, very hungry packs!)

And, they’re on to us. They know we’re always concocting new recipes and constantly looking for taste-testers.

Sure enough, the other day Shelley got a call from her neighbor, Marrie. (For those of you who are regular readers, you may remember that she’s the genius friend who spurred one of our most popular recipes ever, our Blueberry-White Chocolate Muffins.)

After chatting away, Marrie got to the point. Sooooooo … her daughter reported trying a new type of Snack Bite and REALLY liked it! Could she please have the recipe? Please???

Should have seen that coming, right?!?!

So, for all our little neighborhood foodie fans that are always lurking around and hoping for new “prototypes” – here’s the latest Snack Bite recipe. And, yes, Marrie – this is the one your daughter was raving about! They taste sorta like Reese’s Cups (yeah – yum!), but they have all the healthy protein and whole grains you’ve come to expect from our Snack Bites. And, they’re just as easy to make as all the rest. Plus, freezable and no baking required! (Yay!!!! … We can hear your cheers from here!)

Now, we have to fess up and tell you that we’ve been holding onto this recipe for months. Way back last winter we had a “snack-bite-inventing frenzy” because our families just couldn’t get enough! So why, you ask, are we unveiling it now? Because tomorrow is National Peanut Day, of course! (Check your calendars – we’re not kidding!)

Recipe Notes

If your peanut butter is one of the natural brands that needs to be refrigerated, then so do your Snack Bites. Actually, regardless of the peanut butter you use, these will keep much better in the refrigerator. They can even be frozen (so you may want to make a triple batch!). When frozen, these Snack Bites will be thawed in about 20 minutes.

    • Deryn, you’re hilarious! Nom, nom, nom for sure! I just sent a bunch of these into work with my husband this morning, so he could share with his coworkers who just adore them. He always takes his own little bag of four Snack Bites (and a banana) as his breakfast … now I just have to hope that all the extra Snack Bites I sent today actually made it to his coworkers, and didn’t end up in his tummy!!! 😀 ~Shelley

    • Oh Cathy, these are SOOOO good! And they are full of really good-for-you ingredients, so there’s no guilt in having one or two (or twelve!) as a mid-afternoon snack or even a dessert! Thanks for stopping by – we’re looking forward to another SNF tonight! 🙂 ~G&S

  2. GREAT recipe! I’ll do these with my grandson this week. Thanks so much! Just curious…could you please tell me the name of the font you use to sign your names at the end of your posts? LOVE it!

  3. Good neighbors are the best 🙂
These little treats sound delish. I just thought I would remind you my linky party is live again if you wanted to join.

  4. I just made these for a healthier treat for my picky boyfriend, and I must tell you that I love them! I used dark chocolate cocoa and old fashioned oats only because that’s what I had on hand, and they came out great. The addition of cashews is nice too! He will love them 🙂

      • Good news, he loved them!! Actually I came back here to say that I’m making them again tonight. I’m a sucker for dark chocolate, but I think I’ll use some regular cocoa too this time, and when I get a hold of some quick oats, I’ll be sure to try it! Thanks for the link, I will certainly check it out 😀

        • Yay!!! Three cheers for you, Whitney!! Now you’ve got some yummy snacks to keep on hand that both of you can happily share! Hope you try some of the other Snack Bites – stop back and let us know what you think of the other flavors! ~Gretchen

    • Hi Christine! Shelley and I just love to have a stock of these in our refrigerators – pretty much at all times! Our husbands and kids start asking when the next batch will be made as soon as the last one is taken! We love that they are munching on something totally nutritious – but also incredibly delicious!! Hope you try them! ~Gretchen

  5. Ooh these look fantastic! Reeses are some of my favorite candies, plus these are healthy! Thank you, I can’t wait to try them. Hmm. Yes, a batch needs to go wine tasting with us this weekend, definitely.

    • Oh, no-bake snacks are so gratifying to make! They’re just too easy! And then, when you see how fast they disappear, you can pat yourself on the back for a job well done! It’s pretty much the quickest-ever way to becoming a kitchen superhero! So glad you stopped by today! ~G&S

    • Hi Pamela! Oh I hope you love these as much as we do! Our families cannot get enough – these are just the most perfect snack to get you through a busy day! But they taste like a candy bar … Except there is no guilt (or sugar crash!) later! 🙂 ~Gretchen

    • Hey – a lemonade stand! Brilliant! Maybe we should have a Snack Bite stand. Can’t you just see us standing in the hot sun, behind a Little Tykes table, our sign made with Crayolas and poster board!?!? Haha! That’s some good thinking there, my friend! ~G&S

  6. These look so good! Whenever I get home from work i usually am tired (which makes everyone want to eat badness!) and start ravenously eating things i probably shouldnt! haha this would be perfect to come home to- nice little snack to hold you over till dinner or a snack you can bring to work or a snack you can eat before a workout… love it! just pinned it to my board and started following you 🙂 have a great weekend!

    • Hi, Christina! Yep – these Snack Bites will seriously save your bacon on every single one of those snacking occasions! Say good-bye to badness and hello to these! Ooooh – and I’m loving your blog, too BTW! 😀 ~Shelley

    • Sure! Come on over – we’d love for you to be a taste-tester! We love that our families happily grab these instead of other, shall we say, more ‘convenient’ snacks! My youngest asks for these all the time, and yes – for a snack at school! The minute we run out, I hear, “Mom! We need more Snack Bites!!” 😀 Have a great weekend! ~Gretchen

  7. So, you know you have posted a great recipe when I tell you that immediately after attending a meeting at my daughter’s school this morning, I drove over to Acme grocery to purchase the items I didn’t have for this recipe!! I know we’re all gonna love ’em 🙂 Keep those snack ball variations coming!

    • Wow, Sue! Thanks! We are really, really happy that you and your gang are so excited about our Snack Bites! A special trip to the grocery store after you’ve been stuck in a meeting all morning? Whoa! You are a super-dedicated mommy! Hey, and no worries … we have more Snack Bites still to come … 😀 ~G&S

    • Hi, Abbe! First of all, we are so, so impressed that your daughter is running a marathon! We’re both happy just to be running some 5ks with our families, so that is truly awesome! Hope she has a great run! Oh – and these Snack Bites are seriously not just for kids! They’ve saved our bacon on many a busy day as we teetered on the edge of a foodless energy crash! And our husbands … geez … don’t even get us started about how much they fuss and whine if they find we’re out of Snack Bites when they want some after a workout or on a grab-and-go kinda morning! ~G&S

  8. Aww, sounds like a wonderful neighborhood. We recently moved, but our old neighborhood was just like that! Forget being in a hurry or thinking you could just chat for a few minutes and get back to what you were doing. I can’t even begin to tell you how many planned dinners went unprepared! lol Our new neighborhood is really spread out. You practically need a bullhorn to talk to your neighbors! Either that or have a really sore throat from yelling. lol
You ladies come up with the best snack bites! I’m always looking for something to send with my guys, so they can eat before practice. No bake, peanut butter, and chocolate sounds perfect 😀

    • Hey, Cindy! Funny about those unprepared dinners – I have soooo been there! We all end up spilling into the street or filling up someone’s yard, yapping our heads off while the kids happily play their “night games” … and everyone suddenly realizes it’s waaaay past dinnertime. Oops – leftovers to the rescue, right!?! Hope you and your crew like these Snack Bites as well as the others! They really are such a lifesaver when the kids have after-school practices! Definitely the lasting energy they need to get them through those hectic evenings! ~Shelley

    • You’re hilarious! Ummmmm … you may run into a little issue with excessive calories, but … 😀 No, seriously though – these are so satisfying and filling that usually I am totally content to eat just two or three, even if I’m pretty hungry, and then they hold me over for a long time after. (But if you DO decide to eat the whole batch, don’t worry – your secret is safe with me!) ~Shelley
