This super-fast dip is a delicious identity crisis. Traditional hummus meets a crazy Mexican party (there might even be a Mariachi band … you just never can tell!).

It’s creamy and satisfying, yet kicky and fun … an all-around crowd pleaser! (Oh … and loaded with healthy goodies, too!)

And you know what it got me thinking? Football food!

That’s what we need right now … dips and snackies for the Super Bowl! This dip is spot-on perfect for touchdown-cheering, fumble-booing, I-just-wanna-watch-the-cool-Super-Bowl-commercials … football action!

And actually, it’s a great base for my basketball-shaped March Madness Mexican Dip, too! (Lots of sporty options here!)

You can whip it up in a flash. (But come, on … you knew that, right?!? This is THK, after all! Of course it’s quick and easy!)

Really – if the halftime show’s no good this year, you can hop right up and make this quick-quick before the third quarter! (Although, with Bruno Mars and the Red Hot Chili Peppers – we should be golden, right? So, you may want to make a double batch before the game …)

And then you know what you wanna do? Tuck this recipe away for Cinco de Mayo … and for summer parties … and for late-night noshes …. and …

Yeah, you’re going to want to do that.

And seriously, it really is great summer chow, too.

I actually concocted this waaaaaay back last summer, on a gorgeously hot and sunny day. My parents had the kiddos and my Romeo and I had the day to ourselves. We ditched any notion of doing responsible things like launching major home projects or cleaning out the garage … and we chilled. Just chilled.

But, for proper chillin’ with your guy, you (of course!) need good munchies … and so this hummus was born. (And … I guess we were really hungry, because that’s the exact same day I created our Sun Dried Tomato White Bean Hummus!)

Hmmmmm … no wonder this hummus has such an identity crisis! It’s perfect for practically any occasion – just as comfy at a Super Bowl party as it is at a summer beach party.

And of course, it’s fiesta-ready, anytime! Maybe keep the party rolling with our super-popular 3-Ingredient Crock-Pot Chicken Tacos or Slow Cooker Chicken Burrito Bowl recipes. A piñata would be swell, too.

Mexican Fiesta Black Bean Hummus

Mexican Fiesta Black Bean Hummus

Yield: 1 2/3 cups

Toss everything in the food processor, and you've got a Mexican hummus dip that's perfect for snacking, football parties, Cinco de Mayo ... ANYtime!

  Ready in 30 Minutes or Less    Make Ahead    Vegan (and Vegetarian)    Gluten Free  

Ingredients

  • 1 (15-ounce) can black beans, rinsed and drained (see note)
  • 1/3 cup loosely packed cilantro
  • 1 tablespoon canola oil
  • 2 teaspoons lime juice
  • 1 1/2 teaspoons hot sauce (such as Frank's Red Hot)
  • 1 garlic clove
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 16 grape or cherry tomatoes, roughly quartered
  • for garnish: additional minced cilantro and a few diced tomatoes
  • optional for serving: veggies such as baby carrots and pepper strips, or baked tortilla or pita chips

Instructions

  1. Place all ingredients (except tomatoes and garnish) in a mini food processor and process until smooth (or desired consistency), scraping down the sides as needed.
  2. Add tomatoes and pulse processor just enough to incorporate tomatoes and chop them slightly.
  3. Garnish with additional cilantro and tomatoes, and serve immediately (with veggies or chips), or refrigerate until serving.

Notes

Black bean quantity: In our stores, we find black beans sold in both 15-ounce and 15.5-ounce cans. Either will work just fine.

Make-ahead tips: This can easily be made a day or two ahead. Simply store finished hummus in the refrigerator until serving. Also, note that this hummus tends to darken a bit upon standing, so when this hummus is just finished processing, it will be a lighter color than what you see in our photos or what it will be when served after it's been refrigerated.

I actually love watching football (it might be the long-lost college cheerleader coming out in me), but sadly, as a born-and-bred Cleveland Browns fan, I don’t get many chances to root for a local team in the playoffs these days. So, I’ve gotta enjoy the other Super Bowl attractions … Like the food (yes – totally agree on loving all the Super Bowl recipes popping up on blogs!) … And the great commercials (have you seen the Doritos finalists? totally hysterical!). So besides rooting for Peyton Manning just because I think he’s a great guy – I’m gonna be focusing on all the other great things Super Bowl Sunday has to offer!   1. Ohhh goodness… Have you ever tried the black bean dip sold by Trader Joe’s? It’s seriously addictive. I can’t buy it anymore because I’ll eat the whole jar in a day by myself, so I always sneak a couple spoonfuls when I visit my parents. You basically just taught me how to make it myself — uh oh! 😉

    1. No, I don’t remember ever trying Trader Joe’s black bean dip, but I can’t believe I’ve missed it! The really funny thing is, last June we posted a recipe for Edamame Hummus, which was completely inspired by the Trader Joe’s version I’d fallen head-over-heels in love with (as had my husband and my neighbors)! Sadly, we don’t have a Trader Joe’s very close, so I created that Edamame Hummus to get me by – and I actually ended up liking it even better than the original Trader Joe’s version! So anyway, I completely understand your Trader Joe’s addiction … and I’m thrilled I could help! I don’t know about theirs, but my version is so full of nutritious goodies that you can totally feel good about sneaking spoonfuls! Just make a double batch and dig in!       1. No TJ’s nearby?? I think I’d DIE! I go there at least three times per week; it’s crazy. And when I was in college and the town didn’t have one, my parents drove up to see me once a month and brought along 12 boxes of my favorite cereal from them. No exaggeration!

        Anyway, it’s SO exciting when a copycat recipe like your edamame hummus turns out better than the original! Especially when it was based off of TJ’s, where everything they sell tastes amazing. I’m always up for sneaking in extra veggies like you did in this recipe. And if you’re ever on TJ’s salsa aisle, see if you can spot their black bean dip; it’s in a pretty small jar! 🙂

    1. Hey, Layla! Although I’m not Middle Eastern, hummus is one of my fave healthy fridge staples, too! Thanks for kindly overlooking the fact that this hummus is not technically a hummus at all, since it lacks chickpeas (and even tahini!) :D. Back when we posted the Italian Cannellini Hummus, we asked our readers what they thought about how the foodie world has sort of commandeered the name “hummus” and applied it to practically any pureed bean- or legume-dip. My husband and I have a dear friend who’s Israeli and who’s given me lessons on preparing his utterly amazing (and very authentic!) hummus – he just laughs at me with all my various “hummus” versions! No matter what you call it though, this dip is super-delicious! I hope it spends lots of time in your fridge (and your tummy!) now, too! 😀 ~Shelley

    1. Thanks, Kristi! 😀 I loooove black beans, too! And this dip is such an easy way to enjoy them! I actually whipped up a batch earlier this week and stashed it in the fridge. Then, when my poor hubby finally straggled in from a late flight, he and I pulled out the hummus and scarfed it down in no time flat! So good! I just wish I’d made a double batch! ~Shelley
