I’m a sad, sad momma today. (But just don’t tell my kids.)
It’s nearly the end of the school year, and after such as amazing year, I’m just not so sure I’m ready for it to be over!
As all you moms (and dads!) know, the end of the school year means that our sweet angels are one year older. One year closer to middle school, high school … college. Gulp.
Yeah … the end of school is a gentle reminder that our kiddos are getting older.
Gah! My babies!!
Why do they grow up so fast?! It makes me kinda sad how fast this is happening!
But even though I secretly wish my little loves would actually stay little, I’ve gotta pull myself together and celebrate this fabulous school year that’s rapidly coming to a close. Because really, it was nothing short of fabulous.
There is so, so much to be proud of – so much to celebrate!
Not only am I gushing over their stellar marks, but I’m just beaming over the people they are growing into. Each year, my heart just swells with delight and amazement over these marvelous little humans that call me “Mom!”
And … as much as I’m sad to see another fantastic school year end, I’m also incredibly excited that we get to spend the whole summer together!
So, ok then. Enough of the mom-tears! Celebrate we shall!!!
For you long-time THK followers, you may remember back to our early days … and our end-of-the-school-year smoothie. It’s STILL a family fave at my house! It’s so cool and refreshing!
Really, what better way to celebrate the start of summer than with a yummy, icy smoothie? It’s the most perfect way to welcome home the kiddos and say, “You did a great job this year!! Can’t wait for our summer together!”
Several months ago, my littlest (who brainstormed our Pineapple Orange Creamsicle Smoothies, too!) was begging for a smoothie for breakfast. I had some fresh fruit on hand and just tossed it into the blender with some ice, honey, Greek yogurt and vanilla, and my Strawberry Banana Smoothie recipe was born. It was good. It was very, very good.
Hmmm … so simple.
Like, too simple.
Is that really a thing? Too simple??
No! Stop second guessing yourself! It’s awesome! Here at THK, we LOVE easy!
And totally simple and easy is exactly what you need as you wipe that pride-filled tear from your cheek on the last day of school.
But you (like me!) need to pull it together! The kids will be home any minute!
Here’s wishing you a heart full of fabulous memories to start your summer!
Classic Strawberry Banana Smoothie
This easy Strawberry Banana Smoothie recipe is cool and refreshing, with ingredients you probably already have on hand!
• Ready in 30 Minutes or Less • Vegetarian • Gluten Free •
Ingredients
- 2 cups ice
- 1 1/2 cups hulled, halved strawberries
- 1 (5.3-ounce) container nonfat vanilla Greek yogurt
- 1/2 very ripe banana (see note)
- 2 tablespoons honey
- 1 teaspoon vanilla
Instructions
- Put all ingredients into blender.
- Blend until smooth. All ingredients should be well incorporated.
Notes
Banana: A banana that has some green left or is still quite yellow won't work as well. Just like with banana bread, an over-ripe banana is the best choice to add the right sweetness for this smoothie. Another thought: frozen bananas also work great in this recipe! If you're like us, we always keep over-ripe bananas in the freezer, ready for recipes like this one. If using a frozen banana, your smoothie may be slightly thicker.

Can I omit the yogurt?
Hi, Margaret! You should be fine to omit the yogurt — of course, the smoothie will taste a bit different and won’t have that nice, creamy texture. But it should still be delicious! Let us know what you find out! 🙂 ~Amy
