33 Game-Changing, Healthy Zoodles (Zucchini Noodles) Recipes
~ Zucchini noodle recipes go way, way beyond an easy, low-carb and gluten-free pasta swap. Zoodles are a fun, healthy way to change up soups, salads, even casseroles. Grab a spiralizer (I’m sharing deets on my faves) and a zucchini, and your weeknight dinner plans will never be the same! Look out, zucchini … we’re coming for ya! ~
Zucchini noodles are a total game-changer.
A brilliant swap loaded with all sorts of deliciously nutritious options.
Basically, they go anywhere a noodle can go … but with lower carbs and fewer calories. Plus, zucchini is naturally fat-free. Win, win, win!
Zucchini noodles (aka zoodles – best name ever) can be served hot like pasta, or cold in salads … in “noodle” soups, or layered in casseroles. Oh, the possibilities!
Bonus: they’re fun to make! Like, amaze-your-kids, gather-the-fam-to-watch fun. Those curlicues are surprisingly irresistible, and I can personally vouch for the fact that even teenagers are intrigued. (And if you’ve ever met a teenager, you know feelings of intrigue aren’t typical). It’s like your own little magic show, happening right in your kitchen!
Once I unpacked my first spiralizer, and watched (entranced), as mounds of springy zoodles appeared, well it was pretty much zoodles galore!
And, hey there, all you “good” guys and gals … I’m betting a lot of you put “spiralizer” on your Dear Santa lists this year. I definitely would, except I already own three, which seems like it really should be enough, don’t ya think?!? Ummmm … yeah.
(Side note to help you write that Christmas list: After doing a ridiculous amount of research and having unjustifiably lengthy internal debates, these are the first two spiralizers I bought, which are still the two I’d recommend checking out: the Spiralizer 5-Blade and the Mueller 4-Blade.)
