Vegetarian Chili with Red Peppers, Corn and Black Beans

– Olive oil – Red pepper – Onion – Garlic cloves – Cans black beans – Vegetable broth

INGREDIENTS:

Preheat a large pot over medium heat. Add olive oil and swirl to coat.

Add red pepper, onion, and garlic to pot. Cook until onion and pepper are beginning to soften.

Add all other ingredients. Cover and simmer for about 15-20 minutes, stirring occasionally.

Taste and adjust seasoning, adding more chipotle chile pepper a pinch at a time, if desired.
