Transform ordinary breakfast muffins into a scrumptiously nutritious treat by incorporating a touch of ice cream. The result? Delectable muffin ice cream sandwiches, a simple yet indulgent dessert!
Scoop 1 1/2 tablespoons of ice cream onto the bottom half of each muffin, and place the top half of each muffin back on top to finish each ice cream sandwich.
We love these ice cream sandwiches eaten right away, as we make them, but we've also tested them as make-aheads that you can stock in the freezer (which works great, too).
