Corn tortillas and shredded chicken are layered with a scrumptious avocado spread, pickled red onions, and your choice of salsa and cheese (although we highly recommend salsa verde and cotija).
Mash the avocado with the lime juice, 1/4 teaspoon red pepper flakes, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl.
You can also prep the “smashed avocado” spread in advance. There’s enough lime juice in it to do a pretty good job of holding off the browning oxidation that can happen with avocados.
