– pecans – dates – brown sugar – egg – vanilla – whole wheat pastry flour – baking soda – sea salt – chocolate chips
In a mini food processor, pulse pecans and dates until fairly smooth, scraping the sides of the processor occasionally as needed.
Transfer pecan mixture to a large mixing bowl and add brown sugar, egg, and vanilla and beat on medium speed until very well incorporated, scraping the bowl once or twice as needed.
Add flour mixture to pecan mixture and beat on medium-low just until combined. Stir in chocolate chips.
Press mixture into a baking pan coated with cooking spray. Smooth top with a spatula or scraper.
Lightly press the remaining brown sugar and chopped pecans on top of the dough. Bake for about 18-19 minutes.
