How to Make This Easy Quinoa Salad

Ingredients

QUINOA: Water Quinoa SALAD: Frozen corn Black beans Shelled edamame Red pepper Cilantro Green onions Garlic cloves

VINAIGRETTE: Lemon juice Reduced-sodium soy sauce Smooth dijon mustard Olive oil

1. Place water and quinoa in a small saucepan and prepare according to package directions.

2. Once it’s all drained, transfer it to a large mixing bowl. 

3. Then, add the chopped red pepper, cilantro, green onions and garlic. Toss in your cooked quinoa. (No panicking here – it takes only about 15 minutes to cook the quinoa.
