Scoop 1 1/2 tablespoons of ice cream onto the bottom half of each muffin, and place the top half of each muffin back on top to finish each ice cream sandwich.
To stock up, simply make the ice cream sandwiches as directed, and then wrap each ice cream sandwich individually in plastic wrap and store them in an air-tight freezer bag.
