Rotisserie Chicken Tacos Recipe

Spice up your Taco Night with these fast and effortless Rotisserie Chicken Tacos, boasting an array of distinctive and exciting flavors!

Corn tortillas, shredded chicken, avocado spread, pickled red onions, and optional salsa and cheese (we recommend salsa verde and cotija).

Ingredients

Mash the avocado with the lime juice, 1/4 teaspoon red pepper flakes, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl.

Using tongs, toast each tortilla directly on the grate of a gas burner turned to medium-high. Cook, flipping once until the edges are charred and the tortilla is hot.

Spread the mashed avocado mixture on the toasted tortillas, dividing it equally. Top with the chicken, salsa, cheese, and pickled onions.

You can definitely shred your chicken a day or two in advance. You can also prep the “smashed avocado” spread in advance.
