Herbed Mediterranean Shrimp Pasta

This fabulous Mediterranean Shrimp Pasta is so easy, yet tastes so gourmet.

It's impressive enough for dinner parties, but quick enough for busy weeknights!

– Linguine or fettuccine – Olive oil – Sweet onion  – Shrimp – Garlic cloves – Tomatoes – Tomato sauce with Italian herbs – Fresh Italian flat-leaf parsley – Dried oregano – Dried basil

INGREDIENTS:

Cook pasta according to package directions, omitting salt and oil. Drain.

In a nonstick skillet, briefly heat oil. Add onions and cook until just beginning to soften. Add shrimp and garlic.

Add diced tomatoes, tomato sauce, parsley, oregano, dried basil, salt, black pepper, and crushed red pepper to the shrimp mixture.

To serve, top cooked pasta with sauce and sprinkle with feta and fresh basil.

You can serve this directly from the skillet by tossing the pasta, feta, and fresh basil with the sauce in the skillet.
