Sautéed Summer Vegetable

Sautéed Summer Vegetables features favorite summer veggies, all crowned with a cascade of fresh basil and crumbles of creamy goat cheese.

It's so very simple … yet startling, surprisingly delicious!

– Olive oil – Red onion – Yellow squash – Zucchini – Corn kernels – Cherry tomatoes

INGREDIENTS:

Heat oil in a large non-stick skillet over medium-high heat, swirling to coat. Add onions and cook until they're softening.

Add yellow squash and zucchini to the pan. Cook for about 2 minutes without stirring, then flip. Add the corn on top next.

Add tomatoes and basil, and sprinkle salt and pepper over all the vegetables. Cook for 1 minute.

Remove from heat, and add goat cheese. Serve immediately.
