Toss all the vegetables except tomatoes with oil, salt, and pepper. You can do this in a bowl before spreading the veggies on the sheet pans, or you can do it directly on the lined sheet pans.
I usually just use my hands to toss the veggies with the oil and seasonings. And, I do it right on my parchment-lined sheet pans.
