Quinoa and Chickpea Salad with Feta

Nutty quinoa, protein-packed chickpeas, creamy feta, crunchy carrots and sweet citrus are a surprisingly delicious combination.

It's a quick and easy salad recipe that's loaded with nutrition!

– Quinoa  – Chickpeas – Carrots – Parsley – Orange juice – Lemon juice – Lemon zest

INGREDIENTS:

Prepare quinoa according to package directions. After cooking, allow to cool completely and fluff with a fork.

When really well-fluffed, would equal about 4 cups if lightly spooned into a measuring cup.

In a large bowl, combine cooled quinoa, chickpeas, carrots, parsley, orange juice, lemon zest, lemon juice, feta, salt, and pepper.
