How to Cook Quick Stovetop Vegetarian Chili with Red Peppers, Corn and Black Beans

– 1 teaspoon olive oil – 1 1/2 cups chopped red pepper  – 1 cup chopped sweet onion  – 3 garlic cloves, minced – 2  cans black beans  rinsed and drained – 1  can vegetable broth – 1 1/2 cups frozen corn kernels  – 1 can mild Ro-Tel diced tomatoes and green chilie – 1 cup canned pure pumpkin  – 2 teaspoons cumin – 2 teaspoons packed brown sugar – 1 teaspoon cocoa powder – 1 teaspoon kosher salt – 1/2 teaspoon dried oregano – 1/4 - 1/2 teaspoon chipotle chile pepper 

Ingredients

Step 1:   Preheat a large pot over medium heat. Add olive oil and swirl to coat.

Step 2:  Add red pepper, onion, and garlic to pot. Cook until onion and pepper are beginning to soften, about 5 minutes, stirring occasionally to ensure garlic doesn't burn. 

Step 3:  Add all other ingredients. Cover and simmer for about 15-20 minutes, stirring occasionally, to allow flavors to meld.
