Peppermint-White Chocolate Chickpea Cookies

These scrumptious "Chickpea" Cookies magically replace most of the butter with a clever, healthier puree. Loads of guilt-free nutrition ... but you won't even notice the change!

IngredientS

– whole wheat flour – baking soda – salt – chickpeas – canola oil – butter – sugar – peppermint extract – vanilla – eggs

Step 1 :  In a small food processor, combine chickpeas, oil, and butter. Process until smooth.

Step 2 :  Transfer buttery chickpea mixture to a large bowl. Add sugar, peppermint, and vanilla. Stir in white chocolate chips.

Step 3 :  Measure cookies out by rounded teaspoonfuls, shaping each measured cookie into a ball.
