Place the greens in a large serving bowl (or divide among individual salad plates), layering in a little bit of the peaches, cherries, almonds, and cheese as you build the salad.
For the dressing, whisk together balsamic vinegar, honey, olive oil, mustard, and salt until emulsified. Dress the salad just before serving, or pass the dressing to the table.
