Individual Beef Wellington

These incredibly delicious Mini Beef Wellingtons are the perfect individual portion size!

They've been our absolute favorite special-occasion meal for years.

– filet mignon steaks – kosher salt – black pepper – olive oil – butter – white button mushroom – shallots – fresh thyme

INGREDIENTS:

Pat steaks dry and season both sides of each steak with salt and pepper.

Preheat a large, heavy skillet over high heat, until hot. Add oil, swirling to coat. Add steaks. Sear on each side for 2 minutes.

Turn your stove's heat down to medium high. In the same skillet, melt butter. Add mushrooms, shallots, and thyme.

Sauté for 5 minutes or until very soft, stirring frequently so they don't burn. Remove from skillet to cool.

Lightly flour your rolling pin and work surface (we like to do this on a large piece of parchment or waxed paper).
