Creamy Chicken Gnocchi Soup

INGREDIENTS:

Heat oil over medium heat in a large pot or dutch oven. Cook onion, celery, and garlic until starting to soften but not too browned.

Add broth and milk. Cover and bring to a boil over high heat.

Once the soup is boiling, add gnocchi, chicken, carrots, and thyme. Cook on high, covered, until gnocchi are cooked through.

Remove soup from heat and stir in spinach, salt, and pepper. Serve immediately, garnished with a few extra thyme leaves or sprigs, if desired.

We like this soup fairly thick, but if you prefer yours thinner, you can add a little additional broth from a second can.
