Chili-Lime Grilled Corn Salad

This corn salad is balanced by tangy lime juice and has a pleasant, tingling heat from cayenne pepper.

This salad is so easy, that’s practically all you’ll need to make it, anyway!

– fresh sweet corn  – lime juice – salt – cayenne pepper

INGREDIENTS:

Prepare and preheat grill on medium to medium-high. Meanwhile, husk your corn.

Lay your corn on the grill and close the lid, but turn the ears frequently so that they develop lots of caramelized grill marks without getting burned or charred.

Remove the corn from the grill and allow it to cool until you can safely handle it.

Slice the kernels off the cob and put 5 cups of kernels in a big serving bowl.
