Cheesy BLT Pierogi Skillet Dinner

This nutritious Pierogi Skillet Dinner is loaded with BLT flavors and draped in a rich but light two-cheese "alfredo" sauce!

It's ready with just one pan, in under 30 minutes. You can even make it completely ahead so it's ready to reheat on busy evenings!

– Sweet onion  – Turkey bacon – Garlic – Frozen mini pierogies  – Fat-fee, reduced-sodium chicken broth

INGREDIENTS:

Cook chopped sweet onion and bacon until bacon is nearly done and onion has begun to soften and turn slightly golden. Add garlic and continue cooking.

Add frozen pierogies and broth, stirring so that all pierogies are completely moistened. Stir in cream cheese until fully melted and incorporated.

Then add cheddar cheese and stir until melted. Next add spinach and green onions and stir just until spinach is slightly wilted.

Taste and add just a little kosher salt, only if needed to make the flavors really pop.
