BLT Egg Salad

All the crowd-pleasing flavors of a BLT sandwich, are in this healthy egg salad recipe! It's the perfect potluck salad for summer picnics.

It's so versatile, too – it’s delicious as a sandwich or as a salad, nestled into leafy greens … and even as a dip with whole grain crackers!

– Hard-cooked eggs – Diced tomatoes – Nonfat plain Greek yogurt – Cheddar cheese – Cooked bacon

INGREDIENTS:

Gently combine all ingredients (except optional greens, and bread or crackers) in a medium bowl.

Serve immediately or cover and refrigerate until serving.

Serve egg salad on whole grain bread or toast with baby spinach or other greens for sandwiches.

Alternately, serve with whole grain crackers for dipping.
