BLT Egg Salad

All the crowd-pleasing flavors of a BLT sandwich, in a healthy egg salad recipe! So versatile, too – it’s delicious as a sandwich or as a salad, nestled into leafy greens … even as a dip with whole grain crackers! 

IngredientS

– Eggs – Tomatoes – Greek yogurt – Cheddar cheese – Bacon – Green onion – Dijon mustard – White vinega – Kosher salt – Pepper

Step 1 :  Gently combine all ingredients (except optional greens, and bread or crackers) in a medium bowl. Taste and adjust salt level as needed.

Step 2 :  Serve immediately or cover and refrigerate until serving.

Step 3 :  Serve egg salad on whole grain bread or toast with baby spinach or other greens for sandwiches, or in large lettuce leaves or on a bed of greens for salads.
