Skillet Breakfast Scramble

This easy Skillet Breakfast Scramble recipe is hearty and satisfying, but also a fresh, healthier take on restaurant “skillet” breakfasts.

It's filled with scrambled eggs, potatoes, peppers, onions, cheese and even a bit of smoky bacon.

– Olive oil – Potatoes – Corn kernels – Sweet onion – Green pepper – Red pepper

INGREDIENTS:

Briefly preheat oil in a nonstick skillet over medium heat. Add potatoes, corn, onion, and peppers.

Cook until lightly browned, about 12-15 minutes.

Meanwhile, combine eggs, milk, and salt in a medium bowl.

Pour egg mixture into pan with potato mixture and add cheese and bacon. Continue cooking, stirring to scramble.
