Grilled Tropical Fruit with Almond-Ricotta Sauce

Here's a quick, simple solution for keeping your kitchen cool, dessert on the grill!

Think warm, caramelized pineapple and bananas are perfectly accented by a sweet almond-ricotta sauce.

– Vanilla Greek yogurt – Fat-free ricotta cheese – Packed brown sugar – Almond extract – Fresh pineapple

INGREDIENTS:

Combine yogurt, ricotta, brown sugar and almond extract in a small bowl, stirring well. Cover and chill in the refrigerator.

Clean your grill if needed. Oil the grates. Preheat it medium to medium-high. Lay pineapple crosswise on grates and close the lid.

In the last few minutes of grilling, add unpeeled bananas to the grill, peel side up and crosswise on grates.

Remove fruit from grill, and serve with chilled almond-ricotta sauce and fresh berries and/or coconut.
