Oven Roasted Vegetables Medley

This gorgeous, colorful mixture of Oven Roasted Vegetables has plenty of choices to satisfy everyone at the table. So simple to make, but bursting with flavor.

IngredientS

– carrots – asparagus – mushrooms – squash – zucchini – green pepper – red pepper – yellow pepper – virgin olive oil – salt

Step 1 :  There’s very little hands-on time here, except for cutting the vegetables. And, you can shorten even that little bit of prep time by purchasing pre-cut veggies at the market, if you want.

Step 2 :  Then, simply toss all your colorful vegetables (EXCEPT the TOMATOES) with a bit of extra virgin olive oil, salt and pepper.

Step 3 :  Arrange your vegetables in a single layer on the sheet pans (again … EXCEPT the TOMATOES … they’re coming into play a little later).
