butternut squash extra virgin olive oil  kosher salt black pepper coarsely chopped pecan dried cranberries

How to Make This Adorable Thanksgiving Salad with Butternut Squash “Turkey”

STEP ONE: Preheat oven to 475°F. Line a large baking sheet with parchment paper.

STEP TWO: Carefully slice the squash in half vertically, from stem to bottom. Scoop out and discard the seeds.

STEP THREE: Peel only one of the halves and dice it into 1/2" cubes to equal about 2 1/2 - 3 cups (the exact amount will depend on the size of your squash).

STEP FOUR: Toss the cubed butternut squash with 2 teaspoons oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
